ENERGY Bites
I hang with my bestie Missy K a lot and know it requires a massive amount of energy to keep up with her! So, I’m always on the prowl for easy to make (and EAT) protein snack items. After quite a few stops and starts I’m hooked on these super easy, super tasty Energy Bites (and, Missy K LOVES them). I’m sharing two of my fave recipes below so you can try them out for yourselves. Let me know what you think! I will grab 2 or 3 of these on my way out the door or, freeze them and take them skiing for a snack.
THE BASIC BITE
1 C Peanut Butter (or any nut butter you like)
2 Scoops of Jay Robb Protein Powder (I use Vanilla but you could use Chocolate)
3/4 C Rolled Oats
1/4 C Ground Flaxseeds
1/2 C Chocolate Chips (you can use any flavor you like)
2 T honey or Maple Syrup
Combine all ingredients in a large bowl and refrigerate for 30 minutes. Remove from fridge and roll into 1-inch balls. Store energy bites refrigerated in an airtight container. Makes 12 – 15 energy bites.
NOTE: I freeze mine so I can bag them and use as snacks while skiing. Of course, veer away from putting them into pockets with “heaters”!!
SUGAR COOKIE BITES
1 C rolled Oats
1/2 C Roasted Cashews
4 – 5 T Agave Nectar or Honey
1 T Peanut Butter
2 – 3 T Vanilla Extract
Pinch of salt
Place the oats and cashews in a food processor. Pulse for a few seconds, until a coarse mixture results. Add the honey and peanut butter. Pulse until combined. Transfer the mixture to a bowl and roll into balls. Store in an airtight container in the fridge for up to 2 weeks. Makes 12 energy bites.
I like to use a cupcake pan for the bites so they don’t roll around in the freezer…….You can use a plate, cookie sheet or whatever you have handy.
