My Daughter’s Three Ingredient Pancakes:
1 or 2 Scoops of Chia Seeds
DO THIS: Blend above ingredients together. Warm a non-stick pan to medium heat and add a little coconut oil to pan (I cheat and use the Coconut Oil Spray). Cook silver dollar size pancakes about 30 seconds on each side. Stack on a plate. I like to add cinnamon on top with syrup.
I love healthy recipes that are quick and easy. Because I am STILL hooked on syrup, I am sharing my “clean eating” version:
I like to use fresh berries ( raspberry, sometimes boysenberry), mash it up with a fork, squeeze lemon into the ‘mashed’ fruit, add a few ( by “few”, I do not mean half a bottle…..its happened… ) drop of real maple syrup, and mix it all together. It turns in to a syrup-y mixture that reminds me of a berry compote. This breakfast reminds me of summers at the beach with my family growing up. We used to go to the local Farmer’s Market every weekend.
