SUGAR FREE MERINGUES…

I had this incredible sugar craving and could not think of what to do about it (other than driving through Dunkin’ Donuts and ordering 6 dozen slimy treats! It could happen:)

So, I thought maybe I’d TRY to alter a recipe for something simple and go for it. Now, keep in mind I am NOT a “recipe creator” like some of my pals…..so, NO judging! My only “thing” or limitation was that my eating plan was calling for a snack with 6 egg whites…..I know, right??

I chose to alter my Meringue cookie recipe. So here is what I did…

6 Egg Whites

6 T Erythritol Sweetner (I use Surkin – from Amazon)

1/2 t Vanilla Extract

1/8 t Sea Salt (or regular if you like)

1/4 t Cream of Tartar

To Bake:

Preheat oven to 250F.

Combine egg whites, Surkin, Vanilla, Cream of Tartar and Sea Salt. Beat on medium high until pretty stiff and glossy. *NOTE: peaks should be stiff but NOT rigid or hard.

Spoon or pipe mixture into 20-24 meringues on baking sheet (I lined mine with parchment paper) Bake for 18 – 20 minutes. Turn heat down to 200F and let meringues sit inside oven for 2 hours or more. (I went to gym while these were sitting….)

Remove/peel from parchment gently.

HAVE YOU TRIED THIS? WERE THEY SUPER YUMMY? DID IT FEEL LIKE CHEATING? I WANT TO HEAR EVERY LITTLE DETAIL! SERIOUSLY…
