UNEXPECTED YUMMM…

Avocado Baked Eggs

Am I the last person to the party here?! It seems this little breakfast treat is everywhere. I’m not going to lie…the first time I saw this combination I thought “ewwww”. I love both of the main players here but…together AND baked??!!! Well, as usual, wrong again. It is so quick and easy AND tastes amazing.

Here is what I used:

INGREDIENTS:

small eggs
avocado (halved and pitted)
2 teaspoonsfresh chives (chopped, or to taste)
to taste dried parsley (or fresh)
to taste salt (and freshly ground black pepper)
2 slicesbacon (cooked and chopped)
Shredded Sharp Cheddar Cheese

Remove the pit. Then, take a spoon and hollow out the avocado so there is more room for the egg.

Crack an egg into each shell.

Add your toppings. You could really put almost anything on these….I used bacon and sharp cheddar cheese with Mrs Dash seasoning.

METHOD:

Most recipes tell you to bake them in a 400 degree oven. But, to tell you the truth, they cooked perfectly in the microwave. If you chose to use an oven, bake for 30 minutes. Then, check the center to make sure the egg is cooked and not too runny.
