LOTS of comments asking about our Tomato Soup and Asiago and Pear Grilled Sandwiches. A slight twist on a classic comfort food.


2 T Butter

1 T Olive Oil

1 Clove Garlic

2 Grated Carrots

1 Finely diced onion

3 Heaping T of Tomato Paste

1/2 C Heavy Cream (I used Nut Pods instead)

2 Cans Whole Tomatoes

2 C Veggie or Chicken Broth

2 T Basil


In a large pot combine butter, olive oil, garlic, carrots and onion. Saute on medium heat for five minutes before adding the tomato paste, whole tomatoes, and broth. Bring the soup to a boil and then reduce to a simmer before adding basil, salt and pepper and heavy cream (Nut Pods). Let the soup simmer for at least 30 minutes and then use an immersion blender or transfer the soup to a blender and blend until the soup is a creamy consistency. Serve with Grilled Cheese sandwich, or light salad.

I used a Pugliese fresh baked bread, Asiago Cheese and fresh Bosc Pears to make the grilled cheese. We chose a Savignon Blanc wine to accompany our comfort food.
