Nothing says SUMMER like sun, butterflies and gardens!

I’ve been planting some small, beginner versions for the past couple of years with Missy K and put one in again this year. We planted Zucchini, Beans, Cantaloupe and Tomatoes. Our first Zucchini was picked today! Wooohooooo.

One of my favorite things to do with veggies this year is to “roast” them in the oven. It’s all over Instagram…..super easy and super tasty.

Spoiler Alert: YOU CAN DO THIS WITH ALL OF YOUR VEGGIES! Everyone loves it!

Clean and slice your zucchini. Line a baking sheet with parchment paper (don’t know why….but this paper makes it taste sooooooo good). Heat oven to 425 degrees. Drizzle your zucchini with olive oil or my fave, avocado oil and add a touch of sea salt. Place zucchini on paper and bake for 20 minutes. Be sure to check often because every veggie cooks differently and we don’t want them to burn!
