Okay, just kidding about the “crisis”.

But, totally serious about the “egg” portion!

This Fritatta has been on repeat at our house all.summer.long. Super easy to throw together and very “forgiving” when it comes to ingredients. You can use ANYTHING you have in your fridge. ANYTHING!

Today’s version…Mushroom, Sweet Potato (I’ve been on a little rant with these lately, right?), Zucchini, Onion and Celery Fritatta.

To Make:

Preheat oven to 375.

Cut up veggies. Put Olive Oil in pan and heat. Saute veggies until tender (about 10 minutes for sweet potatoes). Add 3 whole eggs (beaten) to pan. When egg begins to “set”, take pan off stove and place in oven. Cook for 12 – 15 minutes.

Great protein and super fast to make when you just don’t have time to be cooking!
