Turns out you CAN get that holiday cookie fix without completely destroying your training diet.
These crunchy-on-the-outside and creamy and chewy on the inside treats are actually pretty healthy. Each egg white has approximately 17 calories. If you flavor them with peppermint extract (do NOT use extract with OIL..it will deflate the egg whites), and leave off the chocolate (I know…..I feel your pain) you have something to satisfy your cravings AND keep your food intake on target! They are equally tasty plain…..just sayin’
CHOCOLATE DIPPED PEPPERMENT MERINGUES
5 egg whites (I buy these in cartons for quick use)
1/4 + 1/8 tsp Cream of Tartar
3/4 tsp Erythritol (I use SWERVE)
Dark Chocolate (70% Cocoa at minimum to stay healthy) Melted & Crushed Candy Canes for “sprinkling” on top.
Preheat oven to 250. Line your baking sheet with Parchment Paper.
Whip egg whites until stiff and forming peaks. Add Cream of Tartar.
Slowly add sweetener.
Place meringue in piping bag and make little “dollops” on parchment paper lined tray.
Once cooled, dip each meringue in melted dark chocolate and sprinkle crushed peppermint over the chocolate. Or, serve them plain:)
These are so good and so easy to make. I like to use them as little decorations on cakes or pies too.
