Prawns & Summer Zucchini

  • 3 med size Zucchini
  • 2 Spring Onions
  • 1 lb Fresh Prawns, pre-cooked
  • 1 T Sesame Oil
  • 2 Garlic Cloves
  • 1 tsp Grated Ginger
  • 1 T Coconut Aminos
  • 1/2 tsp Ground Pepper
  • 1 tsp Sea Salt
  • 1 T Sesame Seeds


  • Grate Zucchini and place in bowl. Place a good amount of salt on grated zucchini and allow to sit for 30 minutes.
    Squeeze grated zucchini into balls in order to squeeze out water. When you have squeezed all water from zucchini – it is time to cook it.
    In a large pan, slowly heat sesame oil and add garlic, ginger, and finely sliced spring onions.
    Cook for 5 minutes on medium-high heat before adding the zucchini and cook for another 5 – 10 minutes.
    Add Coconut Aminos, ground pepper, sesame seeds, and prawns and cook for another 5 minutes.
    Add additional sauce according to taste.
    Garnish with sesame seeds and serve piping hot!
    *NOTE: I found that putting too much salt on the zucchini made the dish too salty. You m ay want to rinse the zucchini before cooking it. Be sure to squeeze rinse water from zucchini prior to cooking.
