EGGPLANT FRIES
A super easy, crunchy alternative to those "other" fries! Low fat, high fiber fries for Labor Day Weekend!
Equipment
- Air Fryer
Ingredients
- 1 medium Eggplant cut into three inch sticks
- 1/4 cup Flour
- 1 beaten Egg White
- 1 cup Panko bread crumbs
- 3/4 cup Parmesan Cheese Grated
- 2 T Olive Oil
- 1/2 tsp Garlic Powder
- 1/2 tsp Salt
- 1/2 tsp pepper
Instructions
- Cut into 3" sticks. Dip in 1/4 cup flour, then beaten egg white, then in 1 C panko and 3/4 C grated Parmesan + 2T olive oil + 1/2 tsp each garlic powder, kosher salt, and pepper.Air fry for 5 minutes per batch at 400 degrees.* you can roast these for 12 minutes @400 degrees turning at 8 minutes.
Plate and enjoy! We love them with hummus, ranch dressing (low fat) or whatever your fam likes!
