
Cheese & Bacon.
Almost like “food crack”, right?
Smooshy goodness that happens to involve chicken…
And, if it’s so good you stop breathing….it’s the perfect slow-cooker dish for tonight!
INGREDIENTS:
1 1/3 lbs Organic Chicken Breasts
3/4 C Low Fat Cream Cheese
1 Pkt Ranch Dressing
2/3 tsp salt
3 oz Bacon, diced or crumbled
1 1/3 T Fresh Chives, Chopped
1/6 tsp Black Pepper
2 C Baby Spinach
TO MAKE:
Mix ranch dressing powder, salt (if not in dressing packet contents), and cream cheese in a bowl.
Place the chicken in the bottom of the slow cooker. Spread out the cream cheese mixture over the top of the chicken.
Cover with lid and set on low for 5 hours, or on high for 3 hours.
Fry bacon on medium-high heat in a frying pan until crispy. I bought mine already cooked to save time:)
Shred the chicken . Mix everything together. Sprinkle with cheese and bacon and cover with the lid until cheese melts.
Rather than mixing my Spinach into the pot, I chose to make a spinach “bed” for the chicken mixture. Pretty AND the salad-y bottom makes you feel just a little healthier!
Plate and enjoy – my slow-cooker full was gone by the end of dinner. Bottom line: Get in there early!
