We called them “Chunky Monkeys” back in the day.
The girls would wake up for school and come downstairs to the tune of the blender.
It was their favorite thing to eat for breakfast.
Well, the favorite has returned in a slightly different form.
CHUNKY MONKEY OAT BARS
2 large eggs
1 C Peanut Butter
1/4 C chopped dates
1 Med banana, mashed
1 tsp vanilla extract
1 tsp baking powder
1/4 tsp salt
1/4 C Chopped Nuts (I used Walnuts)
1 C rolled Oats
- Preheat oven to 350 degrees. Line an 8″ baking dish lined with parchment paper.
2. Combine eggs, peanut butter, dates, banana and vanilla in a mixing bowl. Use a hand mixer to combine until blended. Stir in oats, baking powder and salt. Fold in chocolate chunks and nuts.
3. Press mixture into prepared pan. Bake 18 – 20 minutes. Cool in pan for 10 minutes; lift up foil or parchment, and cool on wire rack. Cut into 10 bars.
Ours never cooled….and were gone in 30 minutes:)
