Maybe so but, those occasional sweet cravings NEVER seem to disappear!
Not that I’m complaining.
We just have to be clever about making them without the traditional 12 g of sugar per cookie.
This one is a version I found online on a Keto blog. They are incredibly easy to whip up (great for those of us NOT so comfy in the kitchen) and they cook along for an hour – plenty of time to get another thing done either at home or work.
CHOCOLATE MERINGUES
3 Egg Whites, room temperature
1/4 tsp Cream of Tarter
1/4 C SWERVE Confectioners Sweetener
TO MAKE:
Preheat oven to 225 degrees.
Line baking sheet with parchment paper.
In a small bowl, whip egg whites and cream of tarter until stiff – slowly add in cocoa powder and continue to beat until stiff (they wouldn’t fall out of the bowl if you tipped it upside down)
Spoon or pipe mixture onto sheets.
Bake for 1 hour then, turn oven off and let sit in oven for 20 more minutes.
Bake. EAT. Repeat.
