I love Memorial Day Weekend – It’s the official opening of Summer!

The kids are out of school, and the pool is open.

I was looking for something cute, healthy and fresh…

This sweet little parfait was just the thing.  And, you can modify it …so it takes literally 5 minutes to put together when you crowd is ready for dessert.

Fresh berries: Strawberries, blueberries, raspberries anything you have really.

Fresh whipping cream – I use SWERVE CONFECTIONER’S to keep it healthy.

Pound Cake or Angel Food Cake (I bought mine to save time)

Parfait Glasses or any pretty glass ware. (I am using these for the actual day)

Wash and prep fruit.  Whip cream.  Layer cake in bottom of glass.  Add a dollop of whipped cream, then berries.  Continue until glass is full.  I layered mine for the red, white and blue effect.

These were a real crowd favorite!  Super easy.
