I am just getting into cooking.
SO…I am, all of the sudden, owner of a ton of beautiful cookbooks!
And, I think you need to hear my opinion on various dishes and desserts.
Here we go.
I saw this dish peeking at a site a friend had recommended. It was so cute! And, I loved everything I saw. So when this weird black bean recipe came up, I just had to try it. And, I was excited when it turned out to be different but amazingly tasty!
Next time you need something different – try this:
Black Beans & Sausage
4 – 6 servings – Adapted from Kadie’s recipe
4T Olive Oil
1 Bell pepper, seeded & chopped
1 Onion, chopped
5 cloves of garlic, minced
2 (16 oz) cans of black beans (I use low sodium), drained and rinsed
1 (14.5 oz) can of diced tomatoes
1 1/2 C Chicken Broth
1 T dried Thyme
1/2 T dried oregano
1 Bay leaf
1/2 C water
1/4 – 1/2 C fresh, chopped cilantro
salt and pepper to taste
In medium saucepan, heat oil over medium heat. Add onion, bell pepper and garlic and saute until soft and tender, stir regularly.
Stir in beans, tomatoes, broth, thyme, oregano, bay leaf and water.
Bring to boil.
Reduce heat and simmer, stirring occasionally, until the sauce thickens, about 45 minutes. Stir in fresh cilantro and salt and pepper.
Discard bay leaf.
I made brown rice to serve as a “base” for this yummy concoction. This is such a different dish for us – I added BILINSKI’S ITALIAN CHICKEN SAUSAGE (ORGANIC) FOR EXTRA PROTEIN.
NOTE: I am NOT normally a huge fan of sausage of any kind….something about the casing and texture. But, this brand just blew me away. SO GOOD!
