Summer is here and we’re all entertaining outside. Need something that’s pretty and easy? Try this recipe.
And, it just happens to be healthy.
HEALTHY SESAME CHICKEN
adapted from Good Eats
2 T avocado or extra olive oil
1/2 C onion, chopped
1/2 T minced garlic
3 Large organic Chicken Breasts, cubed and trimmed
1/3 C coconut aminos (you can use soy if you wish)
2 T Manuka honey
2 T sesame oil
1/4 C water
1 T cornstarch
1/2 C green onion, chopped
2 T sesame seeds
In a large bowl, let cubed chicken marinate with 1 – 2 T oil, salt and pepper as you get skillet ready.
In a large pot or skillet, heat oil. Add diced onion and garlic, and cook until onions are translucent. Stir consistently. Add chicken and spread out to cook evenly.
Once almost fully cooked, add other ingredients coconut aminos, Manuka honey, sesame oil and water, and stir. In a small bowl, add a few tablespoons of water and 1 T cornstarch. This will thicken your sauce. Stir this into skillet and make sure it’s dissolved. Cover and let simmer for 5 – 7 minutes.
Remove from heat and garnish with green onion and a light sprinkle of sesame seeds.
I serve this with brown rice. You can use white or just serve with broccoli.
