It’s 94 degrees in Denver and all I can think of is something cold and chocolatey!

Try this super easy dessert.

CHOCOLATE COCONUT MOUSSE

MAKES 4 SERVINGS (or, 2 in my house!)

2 ripe Avocados

1/3 C Cocoa Powder

4 T Almond Butter

4 T Unsweetened Coconut Flakes

5-6 Pitted Dates

1/8 tsp vanilla

TO MAKE:

Blend all ingredients plus a dash of salt in a food processor until smooth.  Spoon into glasses or bowls and serve.  I did two variations with toppings – sprinkles & almonds.
