PEELIN’ PRETTY GREAT ABOUT THIS SUMMER!

When is the last time you had a Papaya on a stick?

I was in Cabo and was mesmerized by the fruit cart guy…

It was SO hot and he stood peeling and carving papayas into “cubed” pieces of artwork and spearing them with a stick.

I had to have one.

Crisp, cold and the color of a sunset – I must have eaten 5 of these things….

Summer and it’s fruits are definitely my FAVORITE.

A few I stock up on during season:

MELON:  Cantaloupe, honey dew, watermelon… when the temps rise, you can find these “cubed” and ready in my fridge.  I’ve always loved Cantaloupe – and, it’s a great source of beta carotene which helps with eye health AND vitamin C.

RASPBERRIES:  Another “grab and snack” fave here – Raspberries are especially healthy, great source of vitamin C and fiber, provide folate and magnesium (we ALL need more of this!) and, deliver both B 2 and B 3 vitamins.

TOMATOES:  I absolutely cannot wait for fresh, homegrown tomatoes every summer.  Loaded with lycopene, a powerful antioxidant and many other healthy benefits the tomato is perfect!  Tomatoes can even protect your skin from the sun, improve heart health and are irresistible sliced with a pinch of sea salt!
