Halloween.
The minute I see that word I go right back to dressing up and hoard tons of sticky, gooey, sugary treats in a pillow case (KING, of course) for days…sneaking one after another from under my bed.
Well, its over again this year.
And, I’m long over the pillow case thing. But, do occasionally sneak something out of the bowl (this year I sent ALL of the leftovers to the Tennyson Children’s Home).
I decided to make this super simple pasta imitator for an early dinner last evening hoping to keep us full through the long evening of ghosts and goblins at the front door.
NOTE: BTW, did you know that your RING has all kinds of fun chime tones for Halloween and other holidays? We used the “Witch Cackle” last night and it was just the right kind of scary for the kids:)
Okay, now for the recipe:
Faux Pasta in Italian Cherry Tomatoes and Feta
INGREDIENTS
1 Pouch Hearts of Palm Linguine (Palmini)
2 pints Italian Cherry Tomatoes
4 Cloves Garlic
1/3 C Crumbled Feta (I use low fat)
Salt & Pepper to taste
1 T Olive Oil
1/2 tsp Oregano
1 tsp Thyme
2 T Ribboned Basil leaves
2 T JUST INULIN (sprinkle over dish and mix thoroughly – extra fiber and keeps me full)
Preheat oven to 400. Rinse or soak Palmini noodles. Put aside.
Rinse tomatoes. Place in 9.5″ x 13″ pan. Add garlic, feta, salt and pepper, olive oil, oregano, thyme and Just Inulin and mix until thoroughly combined.
Place in oven and cook for 30 minutes or until tomatoes burst.
Remove from oven and fold in pasta and basil so that everything covered. I put mine back in for another 5 minutes to brown top.
Plate and enjoy!
