If you’ve been around a hot minute, you know I LOVE Italy.
And, I am known to feast on pasta when there…they make this one dish, CACIO E PEPE and I cannot get enough. I tweaked a couple of things to make it slightly less caloric, lower carb and higher protein.

CECIO E PEPE
Prepare according to package instructions.
CACIO e PEPE Sauce
4 T Butter
2 T Olive Oil
1/2 C Pecorino Cheese
1/2 C Parmesan Cheese
1/2 T Ground Pepper
Salt to taste
(Keep some of the cheese aside to top the dish later. First, I toast the pepper then slowly add in the cheese and keep stirring.)
You CAN use regular pasta or Spaghetti Squash for this recipe. I happen to have Palmiri noodles on hand….
