SIMPLE SUMMER SALAD
Mini Cucumbers (just bcuz they are cute)
Cherry Tomatoes
Garbanzo Beans (low salt, canned)
Grilled/Baked Chicken Breast (shredded)
Red Onion
Chop all veggies and place in large bowl.
In another bowl smash or puree your garbanzo beans. Add and mix your chicken breast. Now begin adding your veggies (you really can use anything you have on hand and want to get rid of…)
DRESSING:
Keeping thing healthy and quick –
Stir equal parts Fage Greek Yogurt and Dijon Mustard. Season the salad with plenty of spices, salt & Pepper prior to dressing.
Now, add dressing and mix.
