In just 25 minutes you can make this tasty Salmon dinner. All I can tell you is that this disappeared quickly and is now on our REPEAT menu.
Sun-Dried Tomato Butter Salmon with Broccolini (I added carrots and Brussel sprouts)
1 lb broccolini, trimmed
1 1/2 T olive oil
3/4 Tsp salt, divided
2 T drained and chopped sun-dried tomatoes
1/2 Tsp dried Italian seasoning
1 clove garlic (I use this to save time)
4 6 oz Salmon fillets
1 oz Parmesan cheese, grated
PREHEAT oven to 425. Toss broccolini, oil and 1/2 tsp salt on a large rimmed baking sheet lined with parchment paper. Bake for 7 minutes.
STIR together butter, tomatoes, Italian seasoning, garlic and remaining 1/4 tsp salt in small bowl. Spread butter on flesh side of salmon.
REMOVE baking sheet from oven. Push broccolini to outer edges – arrange salmon in middle and roast until opaque in center. 10-14 minutes.
TRANSFER salmon to plates. On baking sheet, toss broccolini with cheese and squeeze lemon over top. Serve with salmon.
