QUICKEST CHEESY SUMMER SKILLET…

LOW CARB BURGER SKILLET

Serves: 3-4

This super easy recipe is so good when the sun is out, your day is packed and, you really want that “burger taste”!

I used 93% lean ground turkey for my skillet but, both versions are packed with both flavor and protein.  And, she’s not the most gorgeous gal but, her snazzy sauce takes it up a notch.

 

10-12 oz Ground Turkey (lean beef is great too)

1 C Shredded Romaine (I bought mine in a bag)

1 C Shredded Sharp Cheddar Cheese

1 Lrg Onion, sliced thinly

1/2 C Sliced Tomatoes

1/2 Avocado for topper

Seasonings used to taste: garlic powder, salt and pepper

SNAZZY SAUCE

2 T Mayo

1 T Ground Mustard

1 T Relish (I used sweet)

1 T Ketchup (I used “no added sugars”)

Prep all veggies.  Slice onions, romaine lettuce, and tomatoes.

In a skillet, saute onions with a drizzle of EVOO until they are translucent and tender, approximately 8 minutes.  When done, set them aside.

In same skillet, cook your beef/turkey over medium heat with a little olive oil and your seasonings.

Once beef/turkey is cooked through, sprinkle shredded cheese over top of meat.  Reduce heat to low and cover for 2-3 minutes to melt cheese.

While cheese melts, prep your Snazzy Sauce by combining mayo, ketchup, relish and mustard in a small bowl until well blended.

Once the cheese has melted, add onions, chopped romaine, fresh sliced avocado, and the tomatoes to the skillet.

Drizzle Snazzy Sauce on top, and enjoy!

PS.  This lasted roughly 10 minutes here…..here I was thinking there would be yummy left-overs:)
